I love to cook and prepare food. Entertaining is the catalyst for great friendship and there is nothing like sharing some of your favorite foods with friends, relatives and acquaintances.

One of my favorite recipes is five onion soup.

FIVE ONION SOUP

This soup is nothing like the onion soup you get at many restaurants. The typical onion soup is brothy and salty and topped with bread and cheese. I think the salt, bread and cheese is used in place of genuine flavor. This onion soup recipe that I’ve included below is creamy, flavorful and delicious.

Here are the ingredients you’ll need: six medium sized yellow onions (not sweet onions), two red onions, five leeks, three bunches of green onions, three shallots, two quarts of vegetable stock, one stick of butter, two cups of heavy cream and salt to taste.

Chop all of the onions, leeks and shallots into large chunks. They don’t need to be minced or finely chopped. Just chop them into big chunks. They’re going to get cooked down and pureed so you don’t have to worry too much about the size at this point.

Heat a big pot over medium heat and melt the stick of butter. Add all the onions and cook, uncovered, for about 20 minutes, stirring regularly.

Cover the pot and cook for about 30-40 minutes over low-medium heat, stirring every few minutes. Lots of moisture will leave the onions and cause the entire mixture to “sweat” in the pot. If a little bit of sticking starts to occur, put about a half a cup of the vegetable stock in and keep sweating those onions.

After 30-40 minutes, add all of the vegetable stock and cook, covered, for about 20 minutes over medium heat, stirring occasionally.

After cooking for 20 minutes, remove the pot from the heat and cool. You can either let it sit at room temperature for several hours to cool, or put it in the fridge for 30-40 minutes (or out in the cold if it’s winter and you’re in a cool weather climate).

After the soup has cooled, puree it in a blender in small batches. Return the soup to the pot (after cleaning it out) and re-heat it. Bring just to a boil and reduce the heat. Add the cream and simmer for 5-10 minutes. Add salt to taste and you’re ready to go.
